Yes, you can kayak solo. It is good that you have kayaked before so you know a little about what to expect. There is no requirement that but it helps to kayak with a partner because it can be tiring doing all of the paddling yourself. The guide is good about waiting for everyone in the group to catch up. if you go solo (which is completely do-able) then just be prepared to work harder to keep up with kayaks with 2 people. Have fun! You will love it.
Is there a time of day where the chances are higher of going into caves or seeing wildlife? we will be there in a about a week? Thanks!

Call ahead. Attempt to get on a small tour. Actually getting in to the cave is quite tricky on a busy day. Perhaps a week day will get you a better chance.

I'm not sure what the tides were when we went but the waters were rough and we were able to get in and out of the cave with no problem. The staff said at the end that our tour was on of the roughest waters they had seen recently. They said they expect smooth and perfection everyday and apologized to us. We didn't think it was that bad so we must have rougher waters around our area.
